This PR updates the CI workflow to stop running the macOS and iOS matrix entries pinned to Xcode 16.4, leaving the newer Xcode job variants as the remaining Apple-platform coverage.
Changes:
- Removed the macOS CI jobs that targeted Xcode 16.4 (including Sanitizers and ThreadSanitizer variants).
- Removed the iOS CI job that targeted Xcode 16.4.
